Banana Muffins


Banana Muffins
12 Servings~~1 Weight Watchers points each
Ingredients

  • 3/4 cup of all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1/2 cup Splenda
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup Eggbeaters
  • 1 cup banana, mashed
  • 1/4 cup applesauce
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Place cupcake liners in 12 muffin slots.
  2. In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Equally divide batter into 12 muffins.
  3. Bake in preheated oven for 10 to 20 minutes, until a toothpick inserted into center of muffins comes out clean. Turn out onto wire rack and allow to cool.

First and foremost I'd like to welcome you to my kitchen :)

As you can imagine a house with 3 adults, and 4 children (ages 5, 3, 3, and 1) can be an interesting one and I am here to share some family favorites, new and old. Please feel free to take any of these recipes and use them yourself, but please note that some of the recipes posted on this site are not mine and I am certainly not claiming that they are...they are just GOOD and my family will eat it :)
